This cool and refreshing salad is a great side for any summer meal!

INGREDIENTS:
- 1 large seedless English cucumber
- 3 cups cubed watermelon, 1/2‑inch pieces
- ½ medium red onion, diced
- 1⁄3 cup crumbled feta cheese
- 1⁄4 cup fresh mint leaves, thinly sliced
- Juice of 1 lime
DIRECTIONS:
Dice cucumbers and place in a large bowl. Add the watermelon cubes, feta cheese, onion, and mint. Squeeze fresh lime juice over the salad. Serve immediately.
